Here are Some
Kobe Beef - Wagyu Beef Recipes our Family
as come up with and enjoy. Some are not to fancy but all are very good.
we recommend Himalayan salt or
another type of "gourmet salt" for all recipes
#1 - JB Kobe Beef Steaks -
Put a light coating of olive oil on both
sides of steak, place salt and ground pepper on cutting board covering a large
enough area so when you lay the steak on the salt and pepper it will coat the
entire steak. Put steak on top of the salt and pepper and press down lightly the
more pressures you use the more seasoning will work its way into the steak, you
may have to experiment to determine what is best for your personal taste, do
this on both side and recoat the cutting board if necessary with more salt
and pepper, Let stand for 2-5 minutes. Pre-Heat grill to medium-high heat, sear
on each side for about 45-90 seconds, reduce heat to low until steak is finished
in middle to your liking, this will probably mean cutting into one steak to
check. Remember that the steak will continue to cook some after removing it from
grill so it is best to pull it off right before it gets to where you want it to
be. let rest for a couple of minutes and serve. Depending on how much salt cooks
off the meat you might want to re-salt once while cooking. I usually cut a small
piece off the end of steak when they are getting close to done and try it to
determine if it needs more.
#2 JB Kobe BBQ Slow Cooker Kobe
Roast or Brisket
1/4 Cup brown sugar, 1 cup
ketchup, 1/2 cup of your favorite bbq sauce, 1/4 cup red wine vinegar, 2
tablespoons Dijon mustard, 2 tablespoons Worcestershire sauce, 1 teaspoon liquid
smoke, 1/2-1 teaspoon of salt, 1/4 teaspoon ground pepper, 1/4 teaspoon garlic
powder, 1 - 3-5 pound Kobe Roast or Brisket.
Combine all above ingredients
except Kobe beef and mix in bowl, place roast or brisket in slow cooker and pour
mixture over the top and cook for 7-9 hours (cooking time may vary I usually
check at about 6 hours), when done shred beef with fork and return to slow
cooker with sauce remaining in cooker for 30 min. to an hour. Or remove whole
chuck roast and slice as thin as possible and serve.
#3 JB Kobe Swiss Cheese Burgers
use a gourmet salt and high
quality fresh ground pepper, prepare patties or lay out pre-made patties on flat
pan. cover both sides of patties with generous amount of the fresh ground salt
and ground pepper. press salt and pepper into patties with spatula or fork, if
making your own patties you can put salt in pepper in the ground beef and mix
before making patties. Pre Heat Cooking device to medium-high heat sear both
sides for approx 1 minute then cook at a low to medium indirect heat until done.
Add Swiss cheese 1-2 minutes before kobe burgers are done, use any cheese you
like but we have found swiss seems to compliment JB Kobe Burgers very well. If
using skillet re-season half way thru cooking. if grilling re-season 2-3 times
while cooking.
